Pepper Relish

Sweet red bell peppers(about 8)
green bell peppers(about 2)
(When ground the red and green peppers should equal 1 quart)
6 med onions
8 to 10 hot peppers ( or to taste)
2 Cup vinegar(5% acidity)
1 1/2 cup sugar
1 Tablespoon canning salt
2 Tablespoon mustard seed


Grind the peppers in food grinder with medium blade.All the peppers when ground should equal 1 quart. Grind the hot peppers. Then grind the onions, the onions when ground should equal 1 quart. Put in large kettle all of the ingredients and bring to a boil. Reduce heat and cook for 30 minutes. Put in jars and seal. This makes about 10 half pints of pepper relish.This is good on a sandwich, hot dog or beans and peas. It is also good on crackers that have been spread with cream cheese.
