Lemon Meringue Pie

Ingredients:

1 1/2 cups sugar
1/3 cup cornstarch
1 1/2 cup water
3 egg yolks (slightly beaten)
3 Tablespoon butter
1/4 cup lemon juice
grated rind of 1 lemon
1 baked 9 in. pie crust

Instructions:

Mix sugar & cornstarch in sauce pan, add water. Cook until boiling. Boil 1 min.Add half of mixture to eggs. Then put all together & cook 1 min. longer. Stir in butter , lemon juice & rind. Pour in crust & cover with meringue (3 egg whites-1/4 teas cream of tartar- 6 Tbs. sugar) Bake at 400* for 8 to 10 min.
